Yes, this is me participating in Weekend Cooking, which is hosted by Beth Fish Reads. I know, it’s a shocker. Despite the fact that I can cook, I really don’t like to. Actually, it’s not so much the cooking that I don’t like, it’s the time spent in the kitchen. But my mom made some yummy granola last month, and I thought I would give her recipe a try. So instead of spending the 4th of July making the more traditional ice cream and apple pie, I made granola.

This is the recipe exactly as my mom emailed it to me. I always get a kick out of her instructions and capitalizations.

Granola

325 oven
1 large or 2 small pans with 1 or 2 inch sides. You have to stir it as it bakes so a cookie sheet is hard because of low sides.
In a large bowl mix
6 C. old fashioned OATS
2 C. blanched or toasted Slivered Almonds (you can use any nuts or seed you want or less if you what less calories)
2 C. Cashew pieces
1 TSP. Salt
1/2 TSP. Cinnamon

In a small sauce pan heat on low just until warm
1/2 C. Honey or (you can use Maple Syrup for less calories or 1/2 each)
1/2 C. Canola Oil
2 1/2 TSP. Vanilla

Pour the Wet over the OAT mixture & toss well. Place in pan or pans & spread out. Bake & STIR every 10-12 MIN. Bake until golden brown. It will take awhile. ADD 1 – 2 CUPS DRIED FRUIT AFTER IT HAS COOLED COMPLETELY. Store in air tight container.

This recipe makes a lot… I have two of the containers pictured above full of the good stuff. I’m thinking yogurt and granola for lunch.

  4. I’ve got this “thing” for granola….I will literally spend $5-7 at the grocers for a tiny box of granola cereal. It’s a sickness. I think my wallet will appreciate me clipping your post and saving the recipe.

    Your mom should send you recipes more often so you can share with us. This sounds really good and so much better than the kind that I have found in the store lately.

    Ever since we moved to AG, I have been going nuts in the kitchen. Call it peri-menopause or finally having a stove/oven that works right, but I am suddenly Miss Happy Homemaker.

    I always say I’m going to make granola. For me this entails buying the ingredients, then not buying granola for a few weeks until I give up and buy more granola. It’s not very effective.

    Sounds yummy — very similar to the one I make. I use the maple syrup and I don’t bother to heat it. If you use honey, you do have to melt it (thus maple syrup, which saves a pan and a step).

    Once you start with homemade it’s hard to go back to the store type.

    I have always liked the idea of granola but being allergic to all nuts really throws a crimp in it. I guess you can add other stuff that would probably be good too.
