True confession: I have never made a pie in my life.
But. My mom has. And she passed this recipe down to my best friend in high school.
Last weekend all my best buds from high school got together for a girl’s weekend. And Heather baked The Pie.
That’s the pie baker on the bottom left. And me on the upper right, but you probably knew that.
Sour Cream Apple Pie
Filling:
- 1 cup sour cream
- 2/3 cup sugar
- 2 tablespoons flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 1 egg
- 3 cups peeled, sliced tart apples (about 1 1/4 pounds of slices)
- 1 9″ unbaked pie shell, frozen or chilled in the freezer for at least 30 minutes
Topping:
- 1/2 cup brown sugar, packed
- 1/3 cup flour
- 1/4 cup butter, room temperature
- 1/2 teaspoon cinnamon
Preheat oven to 400°F.
Mix together sour cream, sugar, flour, salt, vanilla and egg. Add apples, mixing carefully to coat well.
Put filling into a pie shell and bake at 400 degrees initially for 25 min.
Mix together all ingredients for the topping until the mixture resembes coarse crumbs. Remove the pie from oven and sprinkle with Cinnamon Crumb Topping. Bake for an additional 20 minutes.
Let cool for a hour before serving.
Eat. Preferably with friends.

I have never baked a pie either and it’s not something I’m looking to start now. My partner, the pie lover in the family, bakes them – I’ll have to pass this on to him. He’s always so excited for this season because he feels like there’s no limits on the amount of pie he can consume.
My specialty pie is chocolate cream (dump cooked pudding into pie crust), but I prefer cakes and cheesecakes instead:)

I made a pie once. It must have been atrocious, because my husband whined, “Do we eeeeeeeeeeeeever have to eat this agaaaaaaaaaaaaaaaaain???”

Seems like you have learned the art of delegation – let the friend make the pie and then enjoy the end product and the good times with friends which follow.

I never would have thought about adding sour cream to an apple pie – how unusual! Apple pie is one of the best desserts that I make, but I’m usually too lazy to make it because of all of the peeling and chopping.
Friends are the best part of eating pie. Especially when someone other than you made it. I wish I still stayed in touch with my best hs friends. But considering one is in New Orleans, the other in DC and there are 6 children between us, it’d be hard to get together
I have never heard of such a thing as a sour cream apple pie! It sounds yummy and intriguing.
